Win a Blender! Make a Smoothie!

We were recently contacted by Chiquita, you know the banana people? They wanted us to try out their new smoothies and asked if they could send some to us. We aren’t the kind of girls to turn down free stuff so we promptly accepted. Why do you care about this? Keep reading!

LMA called me one day and said, “What was Chiquita sending us? Because I have a HUGE box on my front porch!” We were thrilled to open the box and discover they had included an Oster Fusion Blender as well as an Oster Blend and Go Cup! Again, why do you care? Because we are going to pass our good fortune on to you!

As you know, our topic this week is Cooking. In order to win the Oster Fusion Blender and Blend and Go Cup all you need to do is submit your cooking tips and/or recipes. Chiquita Smoothies

Since Chiquita was kind enough to send us an ice chest full of smoothies along with the blender, we want to talk about the smoothies for a minute. Do your kids beg you for smoothies as much as ours do? I swear, at least three times a week my daughter asks to make a fruit smoothie. Sadly, I say no more often than not. It makes a mess, even if you use frozen fruit. I’m not real big on messes!

The Chiquita smoothies are great in my opinion just because they eliminate the mess factor! They come in a can just like frozen juice mix and all you have to do is add ice and water. They come in four flavors, Strawberry Banana, Mixed Berry, Peach Mango and Banana Colada. My favorite is Mixed Berry. My kids love all of them. I have to admit that I have also added half a can of vodka to make a grown up smoothie and it was great!

You lazy moms now have a homework assignment.

    Here are my tips for making cooking painless. (1) Have your husband cook. … ok, seriously … Meal plan for the week. While your meal is cooking & you are already in the kitchen, prep for the next night by chopping veggies, putting meat in the fridge to thaw, even pre-mixing ingredients if you can! It cuts done on time in the kitchen because all you are doing is the actual cooking – prep for each night is finished ahead of time!

    Buy bulk ground turkey or burger to save money… then brown it all up with a little onion and garlic and freeze it in 1 lb portions. Then on a day you need an easy meal, it’s ready! Bonus crockpot recipe: one package of your pre-browned meat, one can of kidney beans, one can of black beans, a can of corn, a can of diced tomatoes, a taco seasoning packet and a ranch seasoning packet. EASY, Yummy taco soup! Serve with sour cream, cheese and crunched up chips!

    Cooking tip #1: When making chicken enchiladas, dip the tortillas in chicken broth for a tender and tasty tortilla, then add your fillings and place in baking pan.
    I usually boil an entire chicken and shred the meat for my enchiladas. That makes the best broth. But if you are using pre-cooked chicken such as a shortcut rotisserie chicken, you can still dip the flour tortillas in canned broth.
    (Boiling an entire chicken gives me extra chicken for a casserole or chicken salad later in the week.)

    Once a month take your veggies and fruit and puree them. Then place them in small containers and freeze them. Every time you cook a meal defrost a small container of fruit or veggie and add it to your recipe!! My kids and husband never know when I sneak veggies in their food!! I make waffles and add veggies to them! They are really good! Pancakes are great with blueberry puree as well!! Healthy and yummy!

    Tip #2 Recipe for a quick lunch or even dinner:

    At least once a week I make homemade pizzas but I don’t always have a pizza crust and I don’t want to make a grocery store run.

    However I ALWAYS have flour tortillas so I use those for the pizza crust.
    I put a little olive oil on the tops of the tortillas. You can put olive oil on one then rub the other over the top to transfer oil from one to the other.
    Swirl on a bit of pasta sauce, which I also ALWAYS have in the pantry. Sprinkle a little Italian seasoning on the pasta sauce.
    Another staple I keep is a roll of Jimmy Dean sausage. I scramble that up, drain it and add some to each “pizza.”
    Whatever cheese** I have tops it. It’s not always mozzarella or an Italian blend.
    After all, I’m not making a traditional “pizza.”
    Add any other toppings you like and bake in a 400* oven until the “crust” is crispy and the cheese is melted. With a thin crust, it doesn’t take long!

    **I put the cheese on and then the sausage and any other toppings. This helps keep the cheese from getting too brown.
