I'm with you Lazy/Crazy! I think Rae might be on to something! That sounds like a perfect spring break snack, kind of like a shrimp salsa. YUM!

Here is something quick and easy I made for dinner last night. 

1 to 1 1/2 lbs of cooked diced chicken

3 cups instant rice

1 can rotell

2 cups Monterry Jack shredded

Salt, pepper and garlic powder to taste


While your cooking your rice in microwave, mix together rotell, chicken and cheese.  Add your salt, pepper and garlic powder.  Mix in rice when done.  Put in 13×9 baking dish and back at 350 until cheese is melted.  You can use mild rotell for the kiddos or the regular rotell if you want a little spice.

RaeStanley, I'm right there with you with the hungry mutt and boyfriend thing :) Only difference is my boyfriend's daughter lives with us. When we first moved in together, he insisted I learn to cook. Coming from living with roommates and having a diet of Ramen noodles and mac n cheese, I was extremely reluctant at first. After about a year though, it came to be my “me” time. My biggest tip for enjoying cooking is get everyone out of the kitchen and turn on some music. I know this sounds stupid, but I sing and dance the whole time I'm cooking! Allrecipes.com is a lifesaver too. If we are running low on groceries, I scan the pantry and then search by ingredient (you can even type in ingredients you don't want)… I've made some of my best meals this way. The thing I am hooked on making at the moment is actually a dessert–apple dumplings. http://allrecipes.com/Recipe/Country-Apple-Dumplings/Detail.aspx OH MY GOSH THEY ARE GOOD! And so cheap and easy to make. Two small granny smith apples and one can of Pillsberry Big and Flaky crescent rolls yields six big apple dumplings.

MissRoRo – those dumplings sound great! I'm going to have to try them, I think my kids would love them! I make them chocolate croissants all the time for a snack after school. Regular crescent rolls and spread about 15 chocolate chips on the dough before you roll it up. They love them and go through the entire package! Anything with crescent rolls has to be good!

KissI do the same thing with the chocolate but instead I use Nutella and also add small slices of banana.  Roll it all up in a crescent roll and bake.  YUM!    I've also done this with crepes.    Of course – Nutella on anything -even just a spoon – is always good to me.

Oh man, since we're on the topic of cresent roll desserts…

SOPAPILLA CHEESECAKE. Also known as the best 30 minute dessert on the face of the planet.

Grease a 13×9 cassarole dish. Lay one can of cresent rolls on the bottom.

In a seperate bowl mix 2 (8oz) packages of cream cheese (softened) with a cup of sugar. Spread this mixture on top of the cresent rolls. Top with the second can of rolls. Melt a stick of butter and pour over the top of your concoction. Liberally sprinkle the top with a mixture of sugar and cinnamon. Stick it in the oven on 350 for 25-35 minutes, or until the rolls are golden and the top is crispy looking. Take it out and enjoy the good-ness. You can eat it hot. If you can hang on, it's really good when it has cooled. This really makes me want to do the happy dance when I allow myself to eat this. And MissRoRo, I love AllRecipes. I also turn up the tunes when I cook. I've always loved it and I either cook or color in a coloring book when I'm stressed Laugh Cooking is slightly more productive, so I tend to generally do that. My only problem is that my boyfriend and his family are the pickiest dang eaters EVER. That's why I like cooking for our friends.. lol. I'm helping to “cater” a wedding reception in May, so if anybody has any good summery recipes, let me know. I'm going to make a fruit dip/mix/thingy that's super tasty and easy. Here's the recipe for that, too.

FRUIT DIP and CINNAMON CHIPS

Okay, if you live somewhere that makes the cinnamon chips or cinammon tortillas in the bakery, just go buy those. If you live a po-dunk town like I do, buy some flour tortillas, spray them with a butter spray, sprinkle with a cinnamon and sugar mix, cut into triangle chip shapes put 'em on a cookie sheet and bake for about 5-7 minutes.

For the fruit part: Strawberries provide the base of this and then use whatever is in season – Kiwi, pear, apple, mango, blueberries, banana - anything goes.

 Chop up a pint of strawberries (or put them in a food processor for about three pulses), cut up a few kiwi, a pear (good for the texture) an apple, a mango and I like to put blackberries in (if they're good). Put a Tbsp of whatever jam or jellie you have on hand in the mix as well as two Tbsp of brown sugar. Stir it well and then let it sit in the fridge for about 20 minutes. Take it out and load up a cinnamon chip with your fruit mix. It's a great summer treat!

Wow, I'm definitely going to have to try both of those Rae, they sound amazing!!! I'm also going to try the chocolate croissants, but I think I'm going to try it with some peanut butter spread on there since my boyfriend loves anything with chocolate and peanut butter combined (he's not big on chocolate alone… I tell him he's crazy) Laugh
