Taking Dinner to a friend

I am supposed to be taking a meal to a family of 5 tomorrow.  Their son is having surgery today.  Any one have any great easy meals that they like to take to others?  Ideally, I'd love to be able to double the recipe so I can feed my family too.Smile

Here are two I have done and everyone seems to like them.  I have paired them with Atomic Salad and some Garlic Bread and a bottle of wine.  I added the Atomic Salad recipe at the bottom…from Cooks Collage


Chicken & Artichoke Farfalle

3 cups cooked chicken (I use Grocery Store rotisserie)

16 oz. cooked bowtie pasta

2 cans cream of chicken soup

1 8 oz jar sundried tomatoes, sliced

1 8 oz. jar artichokes, sliced

1 8 oz. jar pesto (I buy the tubs in the deli section of Harris Teeter or Whole Foods)

1 4 oz. jar pimentos

1 8 oz. jar pinenuts

1 bag (2.5 cups) mozzarella cheese

Parmesan to sprinkle on top

 

Combine all ingredients in a large bowl then transfer to an oven-safe dish. Cover dish with aluminum foil and bake at 350 for 20 minutes. Take foil off, and bake for 20 – 25 more minutes.

 

Baked Ziti

1 lb ground chuck, browned

6 cups ziti, cooked according to directions and drained

3 1/2 cups spaghetti sauce

2 cups ricotta cheese

2 cups shredded mozzarella

1/4 cups chopped parsley

1 egg slightly beaten

1 tsp oregano

1/2 tsp garlic

1/4 tsp pepper

1 tbsp grated Parmesan

 

Combine Ziti, 1 1/2 cups spaghetti sauce, ricotta, mozzarella, parsley, egg, oregano, garlic powder and pepper in a large bowl. In 3 quart casserole, pour 1/2 cup spaghetti sauce; spread ziti mixture evenly over sauce. Top with remaining 1 1/2 cups spaghetti sauce; sprinkle with Parmesan cheese. Bake covered at 375 for 30-35 minutes or until hot and bubbly.

 

***I switch the parmesan and mozzarella. I put 1/2 a cup of parmesan in the mixture and mozzarella on top (I cover to bake the first 30 minutes and uncover the last five so cheese on top will brown).

Atomic Salad

3 large garlic cloves, minced

¼ tsp. dry mustard

1 tsp. salt

½ tsp. pepper

2 Tbs. lemon juice

2 Tbs. Parmesan Cheese

½ cup salad oil

Fresh Spinach

2 different kinds of lettuce

Cherry tomatoes or tomato wedges

Croutons

 

Combine first 7 ingredients in bottom of large salad bowl. Taste for additional garlic or dry mustard. It should be spicy, and extra dry mustard usually does the trick. Place lettuce and spinach on top of mixture.   Do Not Toss.  You can also prepare dressing and then do this when ready to serve.  When ready to serve put in croutons and tomatoes and toss. This recipe can be prepared the day before. Cover and keep in refrigerator.

I have even frozen the pasta dishes…they still taste good I wouldn't recommend it if taking to someone.

Oh my goodness! My mouth is watering just reading those recipes! I am going to have to try them. Thanks! Or better yet, maybe LMA will make them and bring me some. She is a much better cook than I am!Laugh
