I tried BMagee's bbq pork from the other thread.  AMAZING!!!!  not kidding.  So easy.  put in a pork tenderloin in crockpot, pour bbq sauce on top and cook on low.  I put 2 in this morning before church and it's ready now.  We are having company so DH went back for 2 more.  he wants to make sure there is enough left over for sandwiches for lunch.  This is a new family favorite!!!

This one is from my Mom… it was one of my favorite things to eat when I was growing up. Takes a little bit of effort at the end but it pays off by having a ready meal in the freezer. It's for burritos and you can make as many or as few as you'd like, depending on how much meat you buy. The thing is, these suckers are easy to freeze and are great to pull out, throw in the microwave and eat with some rice or whatever. It's a very imprecise recipe but it's hard to mess up! Just throw it all in the crock pot and go about your business!

You will need: Flour tortillas (Mom used the 8″ ones, but you could use the big 10″ ones, I suppose!)

Shredded chedder or “fiesta” cheese

Foil if you're going to freeze some of these

One roast (whatever size you want)

Ranch style beans -how many cans depends on how big your roast is

Cumin and chili powder to taste

Salt to taste

I chop up an onion and throw it in

Water – enough to add moisture- don't drown it

Put everything in the crock pot except the cheese and tortillas (der, and the foil). Cook away. I usually give it a few stirs if I'm around, check the water/moisture

After it's all happy together and your roast has cooked, get in there with a potato masher or a spoon and break up the meat and mash the beans in.

Lay out your tortillas and sprinkle chese down the middle. Put a large spoonful or two of the meat/bean/spice mixture on top and roll it up. Voila, burritos! Like I said, these freeze really well. Just roll them in foil and wrap tightly. When you defrost, take them out of the foil (unless you like fireworks – hey, free entertainment for the kiddos) and roll it in a damp paper towel and stick it in the microwave.

I am cooking a good crock pot recipe this week.  Apricot Glazed Chicken.  Put 4 to 6 chicken breasts in the crockpot.  Add 1 package of Lipton Onion Soup Mix, 1 bottle of Russian Salad Dressing (Catalina will work too), and 1 jar of apricot preserves.  Cook on low for 4 to 6 hours and enjoy.  I serve with white rice.  The apricot sauce taste yummy drizzled on top of the rice.  This is also a weight watchers recipe, so at least the chicken portion is low in fat Smile

I have an easy, delicious crock pot recipe..


1 can cream of mushroom roasted garlic soup

1 can cream of chicken soup

1 can nacho cheese soup

3-4 chicken breasts

1 8oz carton of sour cream


season chicken and place in bottom of crock pot, mix soups together and pour over chicken. cook on low 6-8 hours. Right before serving stir in sour cream

I cook spaghetti noodles and top with the chicken mixture.
