This one is from my Mom… it was one of my favorite things to eat when I was growing up. Takes a little bit of effort at the end but it pays off by having a ready meal in the freezer. It's for burritos and you can make as many or as few as you'd like, depending on how much meat you buy. The thing is, these suckers are easy to freeze and are great to pull out, throw in the microwave and eat with some rice or whatever. It's a very imprecise recipe but it's hard to mess up! Just throw it all in the crock pot and go about your business!
You will need: Flour tortillas (Mom used the 8″ ones, but you could use the big 10″ ones, I suppose!)
Shredded chedder or “fiesta” cheese
Foil if you're going to freeze some of these
One roast (whatever size you want)
Ranch style beans -how many cans depends on how big your roast is
Cumin and chili powder to taste
Salt to taste
I chop up an onion and throw it in
Water – enough to add moisture- don't drown it
Put everything in the crock pot except the cheese and tortillas (der, and the foil). Cook away. I usually give it a few stirs if I'm around, check the water/moisture
After it's all happy together and your roast has cooked, get in there with a potato masher or a spoon and break up the meat and mash the beans in.
Lay out your tortillas and sprinkle chese down the middle. Put a large spoonful or two of the meat/bean/spice mixture on top and roll it up. Voila, burritos! Like I said, these freeze really well. Just roll them in foil and wrap tightly. When you defrost, take them out of the foil (unless you like fireworks – hey, free entertainment for the kiddos) and roll it in a damp paper towel and stick it in the microwave.
