Cooking Week

It’s cooking week this week at Lazy Moms.  I would love to show you a fabulous meal I prepared this weekend, but there are none.  I can show you this pizza that I ordered.  That’s my Lazy Mom tip for the day!  But, this blog got me thinking…4th of July 010

I really do like to cook.  Why don’t I do it more often?  I have a love/hate relationship with cooking.  My Mom was a wonderful cook.  I use the past tense although she is still alive.  She used to cook the most wonderful homemade meals when we were growing up: fried chicken, mashed potatoes, homemade gravy and biscuits, etc.  She doesn’t cook too often these days.  She is an empty nester and a busy lady.  She’s got more sets of dishes than anyone needs, but they hardly get used.  In fact, she had to turn her coat closet into a dish closet. 

But, I digress.  I am thinking the reason I don’t cook like my Mom did is because I am a Mom on the go.  Moms today are busier carting kids around to activities and volunteering and doing things for themselves.  Yes, we had activities back then, but not nearly as much.  I remember my Mom being a stay at home Mom who was actually at home.  She cooked and cleaned and ironed.  What the heck is ironing? I am a stay at home Mom who is never at home!

    I finally got my act together, and a few days ago sat down and wrote out 10 days of meals! I wrote down every ingredient I would need, utilizing left overs, etc…and shopped for everything we would need. My bill came to $182 and I thought that was pretty good for 10 days…including breakfasts and lunches. I usually throw something together last minute since I don’t like to cook…but now that I am 5 days into this plan, it feels great to have a plan, to feel prepared, and to just know what is coming every day. I should have done this years ago!

    One thing that motivated me is that since my mom passed away, I have enjoyed going through her recipe book and trying some of the dishes I haven’t had in years. She loved to cook, and I so wish I could tell her about the recipes I have made and how they turned out!

    BTW, during “Survivor” season…we have pizza every Thurs. as just part of our tradition since the kids have lots of lessons on that day…we moms need to make things easy for us…a happy mom equals a happy family! :-)

    Here’s an easy, refreshing, summertime salad recipe…

    Spinach and Apple Salad with Crispy Almonds

    1/4 cup minced onions
    3 tqblesppons apple cider vinegar
    3 tablespoons white wine vinegar
    2 tablespoons sesame seeds
    1/4 teaspoon paprika
    3 tablespoons sugar
    1/2 cup olive oil

    2 tablespoons butter
    3/4 cup blanced slivered almonds
    1 10 ounce bag ready to use spinach leaves
    2 medium size red skinned apples, quartered, cored, thinly sliced

    Combine onion, vinegars, sesame sees and paprika in small bowl. mix in 2 tablespoons sugar. Gradually whisk in olive oil. Season dressing to taste with salt and pepper.

    Melt butter in heavey large skillet over medium heat. Add almonds. Stir until almonds begin to color, about 2 min. Sprinkle remaining 1 tablespoon sugar over. Stir until sugar melts and begins to turn golden, about 2 min. longer. Transfer almonds to bowl and cool. (Dressing and almonds can be prepared 4 hours ahead. Cover seperately and let stand at room temperature.)

    Combine spinach and apples in large bowl. Toss with enough dressing to coat. Mix in almonds. Serve salad, passing any remaining dressing seperately. Serves 6-8 Enjoy! :-)

    I loved your recipe for the crock pot chicken…mine is to use a cheap cut of beef (rump roast, etc.)…pour in some cut up potatoes, onions, and carrots and top it off with a can of French onion soup….cook it on low all day….yummy dinner later! Another one of my “go to” meals is vegetable soup – which is always a bit different because I use whatever is on hand! I try to freeze leftover vegetables and chicken, etc. when I have it – I just pour it into a container and keep adding to it. When the freezer container is full, it is time to make soup. The base of the soup is a can of chicken broth, and I add V-8 juice to that…along with whatever meat I have on hand (ground beef, rotisserie chicken) frozen veggies work well too. I always add pasta or orzo or lentils to make it filling. My family loves my soup – and it is so easy. Because I am a lazy mom, I always use my biggest pot and freeze half (if I am going to cook, I want it to last a while!) I love the rotisserie chickens – always get one when I go to the store. I use them for everything – chicken salad, chicken casseroles, soups, etc. My kids love orzo and chicken, or “chicken hash” – which is just cut up potatoes and onions, sauteed in a little olive oil until tender, with cut up leftover chicken.
